Our delicious, all natural, Wood Fired Maple Syrup is produced from the sap of maple trees right here on our farm. We process the sap daily during the maple season in stainless steel and other food grade equipment and package it in FDA approved containers. No chemicals, no additives. We just remove the water (mostly by boiling) to concentrate the naturally occuring sugar, minerals, and antioxidants. Boiling is also neccessary to form the color and that wonderful maple flavor. Our Amber color has a Rich taste that is often preferred as a topping. The Dark color has a more Robust taste that is often preferred for cooking purposes.
The taste of maple syrup is influenced by the soil the trees grow in. We believe the deep rich soils in the Enchanted Mountains of Western New York produce the best tasting syrup. We also feel that a wood fired evaporator produces a syrup with a deeper and richer taste. Try some, We think you will agree!
